We go to the camp early in the morning. Dawn gives light to the field and it is then that the harvest can begin. We arm ourselves with wicker baskets and kneel down along the rows, delicately, we pick up the still closed flowers one by one. Some mornings the rain and snow make the work difficult and the days ugly. But once the baskets are filled with saffron flowers, we go to the laboratory to carry out the husking. At that moment, the sky becomes clear again and the sun begins to shine. The day is beautiful again.

Our Saffron Is Different
Yes, it's true ! Our red gold is different, it is special. Once the flowers are collected, we go to the laboratory to clean them. The husking phase is also carried out manually. The latter consists in separating the three saffron stigmas from the rest of the flower. Then we put the stigmas inside our electronic dryer, and checking periodically, we wait for the end of a perfect drying, so as to preserve the quality to the maximum. We put the dried stigmas to rest in hermetically sealed containers and let them rest for more than a month. At that point we send them to the laboratory for qualitative analysis and once the result is obtained, the sale begins.
