CHARACTERISTICS
Aged pecorino bagnolese cheese with flavors is made exclusively from raw milk. Its paste has a semi-hard consistency, and its slightly spicy taste is enhanced by a delicate aroma of herbs. This cheese is aged for approximately 9 months, developing its distinctive characteristics.

PRODUCTION PROCESS
Raw sheep milk from Malvizza, sourced from the pastures of Irpinia, is brought to the dairy by the Association's breeders. After heat treatment, rennet is added to form the curd. The obtained paste is seasoned with extra virgin olive oil, onion, garlic, aromatic herbs, and spicy chili pepper. Subsequently, the paste is shaped, hand-pressed, and aged for approximately 9 months.
