Aged Bagnolese Pecorino is a semi-hard cheese characterized by an intense, full-bodied, and slightly spicy flavor. Its texture has a slight presence of eyes, giving the cheese a pleasant structure. It is available in different sizes: a whole wheel weighing 1.8 kg, a half wheel weighing 0.9 kg, and a quarter wheel weighing 0.45 kg. It is an artisanal product, so the weight may vary slightly.

CHARACTERISTICS
Aged Bagnolese Pecorino is a cheese made exclusively from raw milk. It is characterized by a soft paste and a slightly eye-like structure. It is aged for a period of 6 or 12 months.

PRODUCTION PROCESS
The Malvizza sheep's milk, from the pastures of the Irpinia region that cross the Picentini Mountains and the Bagnoli Plateau, is collected by the eight breeders of the Association and taken to the dairy. Here, following a traditional method and without the use of chemical additives, the milk is heated to a temperature between 36?C and 40?C. Subsequently, rennet is added to form the curd, which acquires a soft consistency and retains its nutrients. The curd is cut and transferred to molds to give it the desired shape. After being manually turned and pressed to remove the whey, the cheese reaches its optimal texture and is left to age for a period of 6 or 12 months, during which it develops its characteristic flavor and aroma.
