Spicy Pecorino Bagnolese cheese, with a soft texture and a creamy and fragrant taste. Available in various sizes: whole wheel weighing 1.2 kg, half wheel weighing 0.6 kg, and quarter wheel weighing 0.3 kg. This is an artisanal product, so the weight may vary slightly.

CHARACTERISTICS
The spicy Pecorino Bagnolese cheese with chili pepper is made from raw milk. It has a lively and bold flavor with a slight marbling. It is aged for approximately 3 months.

PRODUCTION PROCESS
The raw milk from Malvizza sheep, sourced from the pastures of the Irpinian region, particularly the Monti Picentini and the Altopiano di Bagnoli, is transported to the cheese factory by the eight farmers of the Association. Upon arrival at the factory, the milk is heated to a temperature between 36?C and 40?C. Following a traditional method without the use of chemical additives, rennet is added to the milk, allowing the curd to form.

The curd attains a soft and creamy consistency, retaining all the nutritional values of the milk. Subsequently, the curd is cut with a special tool, and the chili pepper is added to the resulting paste. This paste is then molded into molds to give it the desired shape. The cheese is then flipped and pressed by hand to remove excess whey. Once it reaches the ideal texture, the cheese is left to mature in well-ventilated areas at a controlled temperature for approximately 3 months.
