Aged Bagnolese Pecorino cheese with mountain flowers, has a semi-hard moist texture and a slight eye formation. It is available in various sizes: whole wheel weighing 1.8 kg, half wheel weighing 0.9 kg, and quarter wheel weighing 0.45 kg. This is an artisanal product, so the weight may vary slightly.

CHARACTERISTICS
The Bagnolese Pecorino cheese enriched with mountain flowers is made exclusively with raw milk. Its cheese has a semi-hard texture and a delicate eye formation. During the first months of aging, wild herbs are added, giving the Pecorino an intense flavor enriched with a pleasant note of freshness typical of the mountains. This cheese is aged for a period ranging from 10 to 15 months.

PRODUCTION PROCESS
The milk from Malvizza sheep, which graze in the pastures of Irpinia, is brought to the dairy by the farmers of the Association and heated to 36-40?C. Without any chemical additives, rennet is added to the milk to form the curd. The curd, with a soft pasty consistency, is broken, shaped in molds, and manually pressed to remove the whey. After approximately 3 months of aging, the cheese is flavored with a mixture of thistle flowers, willow, oregano, and clover from the Laceno plateau. The aging process continues for 10-15 months in controlled environments of temperature and humidity.
