Ingredients

for about 12 pigtails

300 g of flour 0
200 g of Manitoba flour
250 ml of milk
90 g of granulated sugar
½ vanilla bean
1 tablespoon of fluid honey
7 g of dehydrated brewer’s yeast
80 g of butter
1 pinch of salt
milk

Procedure

Take a bowl and add the two flours, butter, yeast, milk, honey, vanilla seeds and sugar. Mix well and in the meantime add a pinch of salt. Knead until the dough is well elastic. Let it rise, covered with a film for about 3 hours, in the oven off with only the light on. After this period, take the dough, place it on a surface and divide it into 8 pieces. Stretch each piece with your hands so as to obtain a loaf about 40 cm long. Form a U and cross the two sides to form a braid, close it at the end. Take two trays with baking paper at the base and arrange the braids on top, cover them with tissue paper and let them rise for about 1 hour. Then bake them at 180 ° for 15 minutes, once cooked brush with milk and add the granulated sugar, or without milk and icing sugar.
