Pasta and beans
Ingredients
- 400g of short pasta (e.g., ditalini or mezze penne)
- 400g canned borlotti beans (or, dried beans soaked for at least 8 hours and then cooked in plenty of salted water)
- 1 medium onion, finely chopped
- 2 cloves of garlic, finely chopped
- 2 celery ribs, diced
- 2 medium carrots, diced
- 1 liter of vegetable broth (or water)
- 1 bay leaf
- 2 tablespoons of extra virgin olive oil
- Salt and freshly ground black pepper, to taste.
Procedure
Hi friends, today I want to share with you my favorite pasta and beans recipe, a warm and comforting Italian dish perfect for winter.
Here is the list of ingredients for 4-6 people:
- 400g of short pasta (e.g., ditalini or mezze penne)
- 400g canned borlotti beans (or, dried beans soaked for at least 8 hours and then cooked in plenty of salted water)
- 1 medium onion, finely chopped
- 2 cloves of garlic, finely chopped
- 2 celery ribs, diced
- 2 medium carrots, diced
- 1 liter of vegetable broth (or water)
- 1 bay leaf
- 2 tablespoons of extra virgin olive oil
- Salt and freshly ground black pepper, to taste.
Here is how to prepare pasta and beans:
- In a large pot, heat extra virgin olive oil over medium heat. Add the onion, garlic, celery and carrots and cook for about 5 minutes, stirring occasionally.
- Add the beans (with their liquid if they are canned), bay leaf and vegetable broth (or water). Bring to a boil, lower the heat and cook for about 20 minutes, until the vegetables are tender.
- Meanwhile, in another pot, cook pasta in plenty of salted water following the instructions on the package. Drain the pasta al dente and add it to the pot with the bean sauce.
- Mix pasta and beans well, adjust salt and freshly ground black pepper to taste. Serve hot with a drizzle of raw extra virgin olive oil.
