Lamb chops with chopped pistachios
Ingredients
8 lamb chops

Procedure
To prepare the lamb chops with pistachio grains, let’s start by flavoring our lamb chops by massaging them with extra virgin olive oil, a pinch of salt for each chop and a pinch of pepper. Put them in a vacuum bag and add the two cloves of garlic. We close and create the void inside. Now let’s cook them at a low temperature, 4 hours at 56 degrees. After 4 hours, remove the ribs and let them sear on both sides with a drizzle of oil in a non-stick pan. Now place them on a baking tray, over a layer of baking paper, brush them with egg white and sprinkle them with chopped pistachios. Let’s bake them at 200 ° for 5 minutes. We serve by placing the mashed potatoes on the bottom using a pasta bowl, place the ribs on top and season with drops of soy sauce.
