Ingredients

1 kg of potatoes
300 g of flour
50g re-milled semolina
1 egg
salt

Procedure

Start by taking the potatoes, wash them and boil them for about 30 minutes. Let them cool and peel them, then pass them in the potato masher. In a bowl, collect the mashed potatoes, flour, re-milled semolina, salt and egg. Start mixing the ingredients with your hands until you get a soft dough. Transfer it to a wooden pastry board, sprinkle it with a little re-milled semolina, when the dough is ready divide it into 4-5 pieces. Work each piece by rolling it up to obtain long cylinders with a diameter of about 1 cm or a little more. Now cut them into small pieces of 2 cm each. Take a fork and gently pass each piece in order to obtain grooves so as to obtain the classic striped shape. Transfer them to a floured tray well spaced apart. Now they are ready to be boiled and seasoned.
