Homemade Easter Dove
Ingredients
- 500 g of 00 flour
- 150 g of sugar
- 150 g butter
- 3 eggs
- 100 ml of milk
- 25 g of fresh brewer’s yeast
- Grated zest of 1 lemon
- Grated zest of 1 orange
- 1 pinch of salt
- 100 g of mixed candied fruit (orange, citron)
- 150 g of raisins
- 1 egg white
- 3 tablespoons of powdered sugar
Procedure
Hello friends! Today I present the perfect recipe for making a delicious Colomba Pasquale, the signature dessert of Italian Easter. This recipe is easy to follow and the result will be a fluffy, fragrant dove that will leave everyone speechless.
Preparation:
- In a bowl, dissolve the brewer’s yeast in warm milk.
- In a large bowl, pour the flour and make a hole in the center. Add sugar, chopped softened butter, eggs, grated lemon and orange zest, salt, and milk with baking powder. Knead well until the mixture is smooth.
- Add candied fruit and raisins previously soaked in warm water and squeezed. Mix well to evenly distribute the ingredients.
- Cover the dough with a damp cloth and let it rise in a warm place for about 2 to 3 hours, or until it doubles in volume.
- Preheat the oven to 350°F (180°C). Butter and flour a dove-shaped mold or, alternatively, a rectangular mold.
- Transfer the dough to the mold, level it with a spatula, and let it rise for another 30 minutes.
- Lightly beat the egg white and brush it on the surface of the dove. Dust with powdered sugar.
- Bake the dove for about 40-45 minutes, or until golden brown and well cooked. Check the baking with a toothpick: if it comes out clean, the dove is ready.
- Let the dove cool in the mold for a few minutes, then transfer it to a wire rack to cool completely.
