Genoese Pesto Crostini
Ingredients
- Italian homemade bread, grandmothers’ favorite bread
- Homemade Genovese Pesto (or alternatively Agricook’s), because nothing beats the taste of fresh basil
- Grated cheese (preferably Parmesan or Pecorino), because it is the cheese that makes this dish even more delicious
- Extra virgin olive oil, why it is the secret to perfect crispness
- Garlic, why garlic aromas are the key to intense flavor
Procedure
- Start by cutting the bread into slices about 1/2 cm thick, as this is the perfect size for this appetizer
- In a frying pan, heat some extra virgin olive oil and add a clove of crushed garlic, because garlic and oil are a perfect pair
- Toast the bread slices in the oil for about 1 minute per side, until golden brown and crispy, because crispness is essential for this dish
- Remove from pan and place on paper towels to remove excess oil, as we do not want the dish to be too greasy
- Take Pesto Genovese and spread it on top of the warm toasted bread slices, and sprinkle grated cheese on top, because cheese and pesto are a perfect pair
- Serve immediately and enjoy!
Tip: For an extra touch, you can add some fresh basil leaves before serving, because fresh basil makes the dish even more delicious.
