Cream of pumpkin and potatoes with mushrooms
Ingredients
- 1 kg pumpkin
- 200g of potatoes
- 1 small white onion
- 1 liter of vegetable broth
- 150g of homemade bread
- 100 gr of pioppini mushrooms
- thyme
- 125 grams of white yogurt
- smoked paprika
- pepper
- salt
- oil
Procedure
Start by preparing the pumpkin and potatoes, both cut into cubes. Chop the onion and add it to the oil in a saucepan after heating it, let it simmer for a few minutes. Add the pumpkin, potatoes and season with salt and pepper. Stir and add the broth, cook over medium heat for about 30 minutes. Meanwhile, in another pan, cook the mushrooms with oil and 1 sprig of thyme, all for about 15 minutes. Salt and pepper. Then cut the homemade bread into cubes and place it on a baking sheet with parchment paper, use a drizzle of oil and bake for about 5 mintues at 200 °.
Finally, prepare the white yogurt by adding the smoked paprika. Serve the soup with toasted bread and flavored yogurt.
