Chicken rolls with herbs, mushrooms and Taggiasca olives
Ingredients
Chicken breast
300gr Herbs
100gr Potatoes 3/4 Peeled tomatoes 400 gr Taggiasca olives 80gr Mushrooms 100gr
Procedure
To prepare our chicken rolls with herbs, mushrooms and Taggiasca olives, let’s start by flattening the chicken breast slices between two sheets of aluminum foil and keeping them aside.
Meanwhile, blanch the herbs and let them cool. Spread them on the chicken slices and roll them up in order to obtain rolls, close them with toothpicks and brown them in a pan with extra virgin olive oil on all sides.
Clean the potatoes, cut them into cubes and blanch them for a few minutes. Remove the rolls from the pan and put the peeled tomatoes, mushrooms and Taggiasca olives in their place, let them cook for about 8 minutes.
After this time, add the rolls and cook for another 20 minutes. Finally we also add the potatoes and continue cooking for 10 minutes. Serve hot and can be an excellent main course or a single dish.
