Bolognese meat sauce
Ingredients
- 500g of ground beef
- 1 onion, finely chopped
- 2 finely chopped carrots
- 2 finely chopped celery ribs
- 4 cloves of garlic finely chopped
- 1 glass of red wine
- 1 can of tomato pulp
- 1 teaspoon of tomato paste
- 1 tablespoon of sugar
- salt and pepper to taste.
- extra virgin olive oil q.b.
- 500g egg pasta (pappardelle or tagliatelle)
- grated parmesan cheese for serving
Procedure
- In a large pot, heat some extra virgin olive oil and add the onion, carrots and celery. Fry for about 10 minutes until soft.
- Add garlic and sauté for an additional minute.
- Add the ground meat and cook over medium-high heat, stirring occasionally, until well cooked.
- Deglaze with red wine and let it evaporate.
- Add tomato pulp, tomato paste, sugar, salt and pepper. Stir well.
- Lower the heat and simmer for about 2 hours, stirring occasionally, until the sauce is thick and flavorful.
- Meanwhile, cook the pasta in plenty of salted water.
- Drain the pasta al dente and toss it with the Bolognese meat sauce.
- Serve hot with a generous grating of Parmesan cheese.
