Grandma’s garden fresh pasta recipe: a healthy and delicious dish inspired by Italian agricultural tradition

Procedure
Maria’s grandmother, originally from the Tuscan hills, always had a lush vegetable garden that provided her with ingredients for her delicious recipes. One of these was a fresh homemade pasta made with vegetables from her garden. This pasta, besides being delicious, was also very healthy due to the use of fresh and organic ingredients.
Here is a recipe for fresh garden pasta as Maria’s grandmother used to make it:
Ingredients:
- 500 grams of flour
- 4 eggs
- 1 teaspoon salt
- 1 pinch of pepper
- 4-5 ripe tomatoes
- 2 zucchini
- 2 carrots
- 1 onion
- 1 clove of garlic
- 2-3 tablespoons of extra virgin olive oil

Preparation:
- In a large bowl, mix the flour, eggs, salt, and pepper until smooth. Roll out the dough on a floured pastry board and let it rest for at least 30 minutes.
- Meanwhile, prepare the sauce: cut the tomatoes, zucchini, carrots and onion into small cubes. In a frying pan, heat olive oil and add minced garlic. When the garlic is golden, add the vegetables and cook for 10-15 minutes until soft.
- Roll out the fresh dough with a rolling pin or pasta machine. Cut the dough into strips or shapes as desired.
- Cook the pasta in plenty of salted water for 2-3 minutes. Drain the pasta and toss it with the vegetable sauce and fresh basil.
- Serve the pasta hot, garnishing with a sprinkling of grated Parmesan cheese.
