Risotto with mandarin
Ingredients
- VEGETABLE BROTH 750 ml
- CARNAROLI RICE 360 gr
- MANDARINS 5
- GRATED PARMESAN 50 gr
- SALT UP to taste
- EXTRA VIRGIN OLIVE OIL to taste
Procedure
Grate the peel of the tangerines after washing them. Now squeeze them, you should get about 250ml of juice. In a saucepan, heat the oil and start toasting the rice, add the grated zest obtained previously (keep some strings aside for decoration). Mix well. Add half of the tangerine juice and cook it by adding the vegetable broth little by little. When cooked, about 15 minutes, whisk the rice with grated cheese, olive oil and the rest of the mandarin juice.
