Parmigiana of zucchini and potatoes
Ingredients
- 500 g of zucchini
- 500 g of potatoes
- 400 g of mozzarella
- 100 g of grated cheese
- 4 eggs
- 1 bunch of fresh basil
- extra virgin olive oil
- salt
- pepper
Procedure
Peel and cut the potatoes into slices and immerse them in cold water. Cut the courgettes lengthwise and cook for a couple of minutes. Now take the eggs, beat them with salt and pepper and prepare the mozzarella cut into cubes. Drain the potatoes and start composing the Parmesan, in a baking dish put a first layer of potatoes, then courgettes and finally the mozzarella. Add some grated cheese and some eggs, continue in this way until you finish the ingredients. Bake at 180 degrees for 90 minutes. Serve lukewarm.
