Eggplant and zucchini rolls
Ingredients
- 2 long eggplants
- 2 dark zucchini
- 1 mozzarella
- 2 eggs
- 60 g of sliced bacon
- bread crumbs
- grated cheese
- extra virgin olive oil
- salt
- pepper
Procedure
Clean the vegetables and cut the aubergines into thin slices. Then pass them in the beaten egg then in the mix of grated bread and cheese. In a pan with oil, brown, turning them once. Now take the courgettes and cut them into slices lengthwise and grill them on the plate. Now compose the rolls, take a slice of bacon, lay a slice of eggplant, two slices of grilled zucchini and one of mozzarella on top. Wrap everything up and place them in a baking dish. Bake them in the oven at 200 ° for about 7 minutes.
